Homemade Tomato Soup (Fresh Tomatoes) {Easy & Fast}

This is a soup for tomato lovers. It’s refreshing, sour, and velvety thanks to the sweet potato, which gives it an excellent texture. I love making it the most when it’s cold and wet outside and all you want is to eat something warm.
There are always tomatoes in the fridge, take 40 minutes for an excellent tomato soup, it’s the kind of soup that you just can’t stop eating. Here’s a great soup for winter that the whole family loves to eat.

3 – 4 Servings

Ingredients:

Large onion, diced
Leek, diced (white part)
Medium sweet potato, diced
2 cloves garlic, grated
A kilo of beautiful tomatoes (7-8 ripe tomatoes) diced
A tablespoon of tomato paste
250 ml of cooking cream (can)

Spices:
A teaspoon of sugar
3/4 teaspoon of sweet paprika
Half a teaspoon of hot paprika
A liter and a half of water (6 cups)
2 tablespoons of broth
3/4 teaspoon of black pepper
Half a teaspoon of salt

Preparation:

1. Heat a medium pot with 3 – 4 tablespoons of oil. Add the onions. Fry for a few minutes until golden. Add the grated garlic, sweet potato cubes and tomato cubes.

3. Add the remaining ingredients. Bring to a boil. Cover. Reduce heat to medium and cook for 40 minutes.

4. Blend the soup until smooth. Add the cream. Check for seasoning and remove from heat.
