The Best Breakfast Sandwich

This sandwich is wonderful. I used wholemeal bread with a lot of vegetables that add great flavor and health benefits to every bite. It looks so beautiful, too.
This sandwich is not for kids, it’s for grown ups that love to eat healthy.
People always talk about what they should make for their kids for school, but what about us? don’t we deserve a sandwich packed with delicious stuff that we can start the morning with or take to work?
That’s why I made this wonderful sandwich.
I’m willing to eat this sandwich every morning — it’s even perfect for dinner. When health benefits, taste and beauty meet, this sandwich is made.

2 Sandwiches

Ingredients:

4 slices of wholemeal bread / spelt / whatever is available
2 eggs
Red cabbage cut into thin strips (you don’t need a large amount)
Large cucumber cut into thin sticks
Large carrot cut into thin sticks
Large tomato cut into thin slices
Avocado sliced into thin slices
Any spread you like: cheese, cream cheese, cottage cheese, butter, hummus, tahini

Preparation:

1.) Boil a pot, cook the eggs for 12 minutes, drain, cool and peel.

2.) Spread any spread you want and start placing layers of carrot sticks, cucumber sticks, cabbage stripes and tomato slices. Salten and season with pepper each layer, cut the eggs using an egg slicer into thin slices, place them on top of the tomato slices and salten.

3.) Add the avocado slices on top, salten and add another piece bread. Wrap it all up with a sandwich wrapping paper and cut it in half.

A beautiful sandwich.
