Easy Tomato Soup Recipe
What a fun soup I’ve been waiting for all day and why do I love it so much? Listen, it’s light without much work. I put a big pot on the fire and let all the smells spread throughout the house. Even Aviv loves this soup.
What about health? It’s important, so I added oat bran to the soup. An opportunity to introduce some health to the children. And the best thing is that Aviv doesn’t even feel like asking for another serving.
5 servings
Ingredients:
7 beautiful red tomatoes, diced
2-3 tablespoons oat bran
2 small onions, chopped
1 teaspoon sugar
1 teaspoon crushed garlic
1 tablespoon Moroccan paprika
1 small sweet potato, diced
5 cups water
2 tablespoons broth
1/2 teaspoon ground black pepper
1/2 teaspoon salt, a little more
Preparation:
1. Heat a pot with 4 tablespoons of oil and fry the onion and sweet potato for about 5 minutes, stirring occasionally, and add the tomatoes.
2. Mix half a cup of cold water and bran and add to the pot along with the water and spices. Bring to a boil, reduce heat, cover, and cook for about 40 minutes.
3. Blend the soup into a smooth puree, check for flavors, and remove from heat.
