Easy Vegetable Muffins Recipe
I had about an hour before dinner — that’s all I needed to make these wonderful muffins.
I checked what I had available in the fridge: zucchinis, carrots and potatoes — I didn’t need anything else to make this amazing dinner.
My kids ate these delicious muffins alongside some vegetables and enjoyed every bite.
12 Muffins
Ingredients:
2 medium potatoes, grated
2 zucchini, grated
2 carrots, grated
1 teaspoon crushed garlic
1 medium onion, diced
2 large eggs
3/4 cup flour / 3/4 cup matzah flour
3/4 teaspoon baking powder
1/2 teaspoon black pepper
1 teaspoon salt
Preparation:
1.) Preheat a pan over medium heat with 2 tablespoons of oil. Fry the onion until it turns a little golden and then transfer it to a bowl.
2.) Add all of the ingredients to the bowl and mix until you get a homogeneous mixture.
3.) Preheat the oven to 180°C/356°F and grease a muffin pan. fill the cups all the way and bake for about 40 minutes.
