Ingredients:

3 M eggs
150 g sugar (three-quarters cup)
2 heaping tablespoons lotus spread
120 ml oil (half a cup)
250 ml heavy cream (box)
2 teaspoons vanilla extract

A pinch of salt
280 g plain flour
2 teaspoons baking powder

Preparation:

 

  • 1.) Preheat the oven to 180°C/356°F.
  • 2.) Place the eggs and sugar in the mixer and whisk for about a minute on medium speed.
  • 3.) Stop the mixer and add the cream, oil, vanilla extract and the lotus spread. Keep whisking on low speed until combined.
  • 4.) Add the salt, flour and baking powder. Whisk on low speed until a smooth and thick mixture.
  • 5.) Transfer the mixture to a baking pan and bake for about 40 – 45 minutes.
