Chicken in a delicious sauce!
I want to share with you one of my favorite recipes. I make this dish a lot for lunch not only because of the wonderful sauce, but also because of the fact that you can make it a day or 2 in advance.
It’s perfect for busy people that need to quickly make lunch.
The wings are tender and flaky — perfect for children or for a Friday evening meal.
You can also add some bread next to it. If you don’t like carrots you can eat it without it, the chicken is still very delicious.
3 – 4 Servings
Ingredients:
1 kilo of halved wings / 10 drumsticks
1 medium onion, finely chopped
4 carrots, diced
1 cup of hot water
2 teaspoons of flour
2 tablespoons of honey/soy sauce
2 tablespoons of vinegar
1 tablespoon of tomato paste
2 tablespoons of ketchup
1 tablespoon of sweet chili sauce
Spices:
1 teaspoon of sweet paprika
1 tablespoon of broth
1/2 teaspoon of black pepper
1/2 teaspoon of salt
Preparation:
1. Heat a large pot (sauté) with enough oil to cover the bottom. Arrange the wings in a single layer. Fry until golden brown, about 10 minutes. Turn and fry for another 10 minutes.
2. Mix hot water with the flour until it dissolves. Add to the pot along with the ketchup, paste, sweet chili, vinegar, cilantro and spices.
3. Add 2 cups. Bring to a boil. Cover and cook for about 15 minutes. Add the carrots and onions. Shake lightly and cook, covered, for another 40 minutes.
