Quick and Easy Mini Pizzas

Mini pizzas are one of my kids’ absolute favorites – they ask for them all the time!
These cute little pizzas disappear in one bite, and you’ll surely reach for one after
another. But first, let’s talk about the key to any great pizza: the dough. It has to be
easy to work with and create the perfect base for any topping you desire.
This recipe delivers a soft, fluffy pizza that’s a joy to bite into – with plenty to go
around so it doesn’t disappear too quickly. Add your favorite toppings and, of
course, plenty of cheese! I always recommend involving the kids in the preparation
– one cuts the dough, another spreads the sauce, and everyone sprinkles on the
toppings and cheese together. Who says making dinner can’t be fun?

Makes 19 mini pizzas

Ingredients:

300 g flour (2 cups + 2 tablespoons)
½ tablespoon dry yeast / ⅓ packet fresh yeast
¾ tablespoon sugar
1 teaspoon salt
60 ml oil (¼ cup)
160 ml lukewarm water (⅔ cup)
1 beaten egg

Toppings:
Tomato sauce / ketchup
Grated yellow cheese / mozzarella
Chopped olives
Corn
Chopped cherry tomatoes
Onion strips

Preparation:

1. In a mixer, combine the flour, yeast, sugar, and salt. Add the oil and water,
then knead until the dough is soft and smooth. Let the dough rise for about 2
hours or until it doubles in size.

2. Punch down the dough and roll it out into a large, slightly thick circle (not too
thin). Use a 6 cm cutter to create circles. Let the dough rise for about 20
minutes. Next, use a small cup to press into the center of the dough circles,
leaving a border around the edges.

3. Let the dough rise for 10 more minutes, then gently press down again in the
center to create a small indentation.

4. Preheat the oven to 180°C (350°F). Spread tomato sauce or ketchup in the
center of each circle. Then, top with cheese and your favorite toppings! Brush
the edges with the beaten eggand bake for about 20 minutes or until golden
brown.

Tips and tricks:
You can freeze the mini pizzas and reheat them in the microwave when you’re
craving a snack — they’ll taste fresh out of the oven! Want a larger pizza? Roll out
the dough into a big circle, add tomato sauce, shredded cheese, and toppings, then
bake for about 25–30 minutes.
