Easy Tomato Salad with Toast
Don’t make this toast salad, it’s addicting — you just can’t stop eating it. Do you know the toast salad that they serve at cafes? It has lots of vegetables and crispy toasts, but it’s really expensive. So why don’t you make it at home instead? This is the perfect salad for dinner/breakfast.
It’s basically a whole meal — truly a great upgrade for dinner.
4 Servings
Ingredients:
3 red tomatoes, chopped small
3 medium cucumbers, chopped small
Red onion, chopped small
5 – 6 mini radishes, thinly sliced and halved
Hot pepper, thinly sliced
10 cherry tomatoes, quartered
Sauce:
4 tablespoons vinegar
4 tablespoons canola oil
Half a teaspoon salt
Half a teaspoon black pepper
6 slices challah
3 slices yellow cheese
50 g mozzarella
2 tablespoons butter
4 tablespoons oil
2 teaspoons crushed garlic
1/4 bunch chopped parsley / optional

Preparation:
1. In a large bowl, mix the vegetables and season.
2. Put slices of yellow cheese on the challah, sprinkle with mozzarella and close with another slice (3 sandwiches), put in the toaster until there are such beautiful toasted stripes.
3. Cut the toast into cubes, melt butter and oil in a pan, add crushed garlic, parsley and season with salt. Add the toast cubes and fry for about a minute on both sides, remove from heat, add to the salad.
