Fresh Cauliflower Salad

Every time I serve this cauliflower salad, I see surprised faces — at first glance, everyone thinks that it’s couscous, but once they taste it, they realize that it’s actually cauliflower, or to be exact, small pieces of it.
If you think that it’s complicated to make this amazing salad, think again. This salad is super easy to make — I put everything in the food processor and I got small pieces of cauliflower in under a minute.
I added some herbs along with lemon, and the final result was just incredible.

4 Servings

Ingredients:

Medium cauliflower
A bunch of parsley (a bunch of fresh parsley)
5 – 6 tablespoons chopped chives

Sauce:
Squeezed lemon
A tablespoon of cilantro
3 tablespoons of olive oil
Salt – black pepper

Preparation:

1.) Break the cauliflower into florets and boil a pot of salted water with two tablespoons of vinegar. Then, blanch the cauliflower for 2 minutes and then drain.

2.) Leave it aside for a couple minutes so all of the liquids will ooze out, place in a food processor and grind to small pieces, similar to couscous.

3.) Transfer to a bowl, cut the parsley and the chives, add the seasoning, mix and serve.
