Spinach Nuggets
I found a way to sneak some vegetables into the kids’ meals 🙂
Here’s a simple and delicious recipe for wonderful spinach nuggets.
Pay attention to what I put inside them: spinach, cheese, sweet potato — all wrapped in a
crispy coating.
No kid will be able to resist these crispy nuggets.
It only takes 10 minutes to make and the oven does the rest.
You just have to make this recipe — these nuggets are amazing. Plus, you can even eat them
at room temperature.
15 Nuggets
Ingredients:
400 g spinach
Small sweet potato
50 g grated Bulgarian / Safed cheese
3 tablespoons oil
1/3 cup breadcrumbs / flour
Half a cup grated cheese
(Gouda, Emek, Ketchup)
Egg
A third teaspoon pepper
Half a teaspoon salt (the cheeses are salty so be careful)
Breadcrumbs for coating
Preparation:
1. Boil a pot of water and cook the sweet potato until soft, cool and mash into a smooth puree.
2. Boil a pot of water and blanch the spinach for about 5 minutes, strain, cool, squeeze out the liquid well and chop finely.
3. Mix all the ingredients to make pancakes and coat with breadcrumbs, another option: fill a kurtzan, lift gently and coat with breadcrumbs.
4. Baking:
Line a baking sheet with greased baking paper and bake for about 25 minutes on the first side, turn over on the other side and bake for another 15 minutes.
5. Frying:
Heat a frying pan with 3 – 4 tablespoons of oil and fry the bites until golden brown on both sides.
