6 Units
Ingredients:
500 g flour (3½ cups + 1 tablespoon)
11 g dry yeast – 1 tablespoon
or 25 g fresh yeast
80 g sugar (1/3 cup)
1 teaspoon salt
Egg yolk
1 teaspoon cinnamon
120 ml oil (1/2 cup)
180 ml lukewarm water (3/4 cup)
Apple filling:
6 apples
100 g chopped walnuts (1 cup)
1 tablespoon lemon juice
100 g sugar (1/2 cup)
1 teaspoon cinnamon
1 teaspoon vanilla extract
6 tablespoons water
1 teaspoon cornstarch
Syrup:
120 g sugar
3/4 cup water
Preparation:
1.) Process the ingredients into a smooth and soft dough. I recommend kneading well. Place in a bowl and proof for about 1.5 hours – 2 hours.
2.) Making the filling:
Peel of the skin of the apples, grate and squeeze them. Add lemon juice to the apples and mix. Place the apples in a pan along with the sugar and cook for a minute. Add 3 tablespoons of water, cook for another 7 – 8 minutes, mix 3 tablespoons of water with cornflour until the cornflour melts and add the mixture to the apples. Cook until the apples become soft and turn the heat off. Add the nuts along with the vanilla extract and cinnamon. Leave it aside for 10 – 15 minutes.
3.) Divide the dough into 6 parts. Flatten each part to a rectangle the size of 35×20. Cut slits 1/3 of the rectangle’s length. Near the top of the dough, just after the beginning, spread a layer of the apple filling and roll it into a roulade.
4.) Proof the roulades for about 15 minutes. Meanwhile, preheat the oven to 180C°/356°F.
5.) Whisk an egg and brush over the roulades. Bake for about 20 – 25 minutes and they turn golden.
6.) Boil water and sugar for a couple minutes and brush over the roulades when they come out of the oven.
You can also freeze.
You can replace the yeast dough with puff pastry and make 3 roulades.
