Homemade Roasted Red Peppers

So yummy! Some recipes are so good that you should double the amounts right away. Eat these with cream cheese or any other spread you like or eat them right out of the jar.
Enjoy every bite, they’re amazing.

Ingredients:

5 red peppers
5 yellow peppers
5 cloves of garlic
1/4 cup canola oil
Juice from half a lemon
4 Tbsp olive oil
3 Tbsp vinegar
Salt

Preparation:

1. Preheat an oven to 180°C.

2. Cut the peppers in half and remove the insides. Arrange on parchment paper with the cut side down and bake for 40 minutes until the peppers shrivel and blacken.

3. You can leave the peppers in a closed oven for another half an hour or you can take them out and leave them in a plastic bag for half an hour.

4. Grate or thinly slice the cloves of garlic, peel the skin off the peppers and cut into strips. Mix with the other ingredients and store in a closed jar.

Good to know…
Double the recipe, you won’t regret it! These taste best when eaten several hours after they’re made.
