Super Moist Chocolate Loaf Cake
There are just some days when life simply happens in the kitchen. This cake, folks, is a little rescue story in itself, and its hero is none other than the beloved childhood pudding. My kids, as you know, are
absolutely crazy about puddings. I always try to make sure that we have a stock at home, but
sometimes, you know how it is, you get stuck.
One day, a small drama unfolded: I was too busy to go shopping, and there was only one lonely Milky left in the fridge. Naturally, it wasn’t enough for two. A little war was about to break out, I could see the tears welling up, and the shouts of “Mine!” were already flashing through my mind. I saw the future, and the mess, so I stopped both of them. I asked them to take a deep breath and give me 5 minutes. I promised to take that one Milky and turn it into something delicious and indulgent that would be enough for everyone.
And that is how this incredibly soft, juicy, and special chocolate cake was born, made specifically for little chocolate lovers. It only took me five minutes to make and get it into the oven, using ingredients you have in your pantry right now. I have to say, the smile on the kids’ faces was worth everything. This cake saves the day!
Loaf pan
Ingredients:
3 M eggs
180 g sugar (a cup less than a tablespoon)
135 ml milky chocolate whipped cream
120 ml oil (half a cup)
240 ml boiling water (a cup)
2 tablespoons cocoa powder / 3 tablespoons cocoa mix
210 g flour (a cup and a half)
1 and a half teaspoon baking powder
Cream:
100 g dark chocolate (a pack)
100 ml heavy cream (a little less than half a cup)
Chocolate spread
Preparation:
1.) Preheat the oven to 180°C/356°F.

2.) In a mixer bowl, mix eggs and sugar for a few seconds. Add the Milky and the oil, and continue
mixing until a smooth mixture.

3.) Add the boiling water and mix on low speed until it is fully incorporated into the batter.

4.) Add the cocoa powder or cocoa mix, and finish by adding the flour along with the baking powder. Mix until just fully combined.

5.) Transfer the liquid batter to a greased baking pan. Bake for 35 – 45 minutes, or until a toothpick comes out with moist crumbs.

6.) Making the Ganache: Break the chocolate into squares. Place the chocolate along with the heavy cream in a bowl, melt in the microwave on full power and mix until a smooth ganache is formed. Glaze the cake with the ganache, cool well and decorate with sprinkles.

7.) The lazy version: Spread the cake with a chocolate spread that the children like and immediately decorate with colored sprinkles.
