Potatoes in Rich Tomato Sauce: The Ultimate Comfort Food
If you ask me, potatoes are one of the easiest ingredients to upgrade. They’re great roasted in the oven as a side for chicken or beef, but I especially love making them right on the stovetop, bathing in a rich sauce. And that’s the beauty of the potato: it absorbs the flavor of the great sauce perfectly!
The combination of potatoes and a savory tomato sauce is one of the most delicious, comforting, and cozy recipes out there. The preparation is simple and uses ingredients everyone has at home.
This recipe is a major favorite for lunch and especially for the Friday evening meal. In our house, we usually end up wiping the bottom of the pot clean with a piece of challah. There’s nothing better!

Ingredients:
2 onions, diced
4 – 5 potatoes, diced
2 cups water
2 medium ripe, soft tomatoes
A thinly sliced hot pepper
Spices:
A tablespoon of sweet Moroccan paprika
A half teaspoon of curry/chicken grill spice
A half teaspoon of black pepper
Three-quarters of a tablespoon of soup powder
A half teaspoon of salt
Preparation:
1.) Boil a pot of water. Mark an ‘x’ on the bottom of each tomato, blanch them in the boiling water for 3 minutes, strain, cool down, peel the skin off, and cut into small cubes.

2.) Fry the onion until it turns lightly golden. Add the potato cubes, saute them for a few
minutes and then add water, the fresh tomato cubes and the seasonings.

3.) Boil, cover and cook over low-medium heat, stirring occasionally and adding more water if
necessary, for 30 – 40 minutes, or until the potatoes are completely soft.
