


Oven Baked Potatoes and Sweet Potatoes
This is a savory delight! I love to make a huge portion of this because it goes so quickly. It really doesn’t take much effort to slice the vegetables and pop them in the oven. The kids love it and it goes with almost anything. Trust me when I tell you to double the recipe!
Makes 4 servings
Ingredients:
6 medium potatoes
2 medium sweet potatoes
2 onions
1/2 tsp thyme
Olive oil / canola oil
Salt
Preparation:
1. Peel the potatoes and cut into thin slices. Peel the sweet potatoes and cut into slightly thicker slices than the potatoes.
2. Preheat an oven to 200°C.
3. Fill a pot with water and bring to a boil. Cook the potato slices for around 5 minutes.
*4. Transfer the vegetables to an oven tray and arrange in a single layer. Drizzle with the oil and season with salt and thyme. Bake for 30 minutes. Cut the onion in half and slice thinly. Sprinkle above the vegetables and return to the oven and continue baking until everything is cooked and tender.
Served with mushroom barley soup and mushrooms stuffed with meat.
