Purple Cabbage Salad
One of the easiest and loved salads out there — it’s perfect for parties. Thin cabbage strips,
a refreshing salad, a great combination of cabbage, carrots, and a wonderful sauce.
The natural sweetness of the carrots and the crispiness of the cabbage always blend well together.
But the most important thing about this salad is the sauce — the sourness of the orange juice, the
sweetness of the date honey, the musturd and the olive oil all upgrade the salad to a whole new level.
Truly a great salad.
3 Servings
Ingredients:
Thinly chopped red cabbage
2 grated carrots
1 thinly sliced red onion
Almond sticks
Wonderful dressing:
4 full spoons of orange juice
4 full spoons olive oil
1 chopped garlic clove
1 tsp. Silan
1 tsp. mustard
White pepper
Salt
Preparation:
1. Put the cabbage in a colander, wash well and dry.
2. Transfer the cabbage and carrots to a large bowl. Mix the oranges, olive oil, garlic, cilantro, mustard, salt and pepper. Transfer to a sealed jar. Shake well and season the salad. Place in the refrigerator, covered, for 30 minutes. The cabbage and carrots will soften while still remaining crunchy.
3. Store in the refrigerator until serving.
