Quick and Crispy Vegetable Fritters

15 Fritters

Ingredients:

3 – 4 medium potatoes
Small sweet potato
2 carrots
Onion, diced
2 cloves garlic, chopped
3/4 cup Quaker – rolled oats
Half a teaspoon of salt
Egg
A teaspoon of salt

Preparation:

1.) Boil a pot with water and cook one potato until it’s soft, then mash it into a puree.

2.) Preheat a pan with 3 – 4 tablespoons of oil over medium heat, fry the onion and garlic until they turn lightly golden, and then transfer them to a bowl.

3.) Grate the remaining vegetables coarsely and grate and squeeze the remaining potatoes  thoroughly as well. transfer to a bowl and add the rest of the ingredients.

4.) Preheat a pan with 3 – 4 tablespoons of oil, form the mixture into small, flattened fritters, and fry them on both sides until they turn nicely golden; afterwards, place them on paper towels.

5.) For those who want to bake: Preheat the oven 10 minutes in advance to  Prepare a baking sheet with a greased parchment paper, place the fritters and bake for about 25 minutes, or until they turn golden. Do not attempt to flip them before this point. Then, flip them over and bake for another 15 minutes or until golden.
