Tortilla with vegetables recipe
Sometimes I don’t feel like investing big efforts so it’s good to keep some Tortillas in the pantry. Last time I stuffed them with chicken breast and this time I feel like filling them with vegetables. I must tell you that the vegetables came out great and I only managed to fill up a few and the rest was eaten up straight.
Ingredients:
Tortillas
2 red peppers
2 carrots
1 onion
1/4 cup corn
1 spoon honey
Diced black pepper
Salt
Baby Greens
Preparation:
1. Cut the vegetables into cubes, fry peppers, carrots, onion and corn until they become soft.
2. Add honey and season.
3. Put the filling into the center of the Tortilla, on top of Baby Greens and roll them.
