Vegetable Soup With Noodles

3 – 4 Servings
Ingredients:
Large onion, diced
Clove of garlic, chopped
3 potatoes, diced
Large sweet potato, diced
2 carrots, diced
2 zucchini, diced
7 – 8 cherry tomatoes (optional)
3 – 4 tablespoons chopped parsley
2 liters of water
Spices:
1 teaspoon turmeric
1/2 teaspoon cumin
1 teaspoon curry
2 tablespoons of soup powder
3/4 teaspoon black pepper
1/2 teaspoon salt
Preparation:
- 1.) Preheat a pot with 3 tablespoons of oil on medium heat. Add the vegetables and fry them for a few minutes. Add the water along with the spices and cook for about 25 minutes. Add the parsley and cherry tomatoes and cook for 20 additional minutes.
– - 2.) You can make the noodles separately or just add the noodles to the soup 5 minutes before the end of the cooking time.
