Eggplant salad recipe
Spanish style sounds intriguing, doesn’t it? I haven’t grown on eggplants in my childhood, but when your husband likes eggplants, something must rub off on you… I am capable of making something out of eggplants every week, each time different tastes and styles, eggplants alone or with vegetables. This time it’s the Spanish style…
Ingredients:
1 onion cut into cubes
1 small eggplant
1 red pepper
1 orange pepper
2 tomatoes
1/3 cup corn
2 sticks of Kabanos sausage
1 spoon tomato puree
1 spoon Paprika
Soup powder
White pepper
Salt
Preparation:
1. Cut vegetables into cubes. Fry in the following order: eggplant, pepper, onion, and tomato, until they become soft. and Season, cover with water and bring to boil, then lower the fire to medium and add the corn.
