Zucchini Salad Liver Flavored

Every time I make this recipe I’m always surprised. It’s super delicious, and more than that, it’s the kind of salad that disappears in no time.
A simple and delicious zucchini salad. Onions, zucchinis and some eggs, that’s it. The combination of these three ingredients is just incredible.

This wonderful salad is perfect for every meal, especially for a Friday evening meal. Trust me when I say this, your guests will absolutely love it.
Every time I have zucchinis available at home, I make this recipe, it’s a total success every time. Make it and you’ll thank me.

3 Servings

Ingredients:

4 Zucchinis cut into cubes
2 large onions, diced
3 hard-boiled eggs
Half a ground black pepper
A little more salt

Smaller amount:
2 medium zucchini
2 medium onions
1 hard-boiled egg
A teaspoon of salt
A third of a teaspoon of black pepper

Preparation:

1.) Preheat a pan with 3 – 4 tablespoons of oil. Then, fry the onions until they turn golden. Since there are many onions, you need to patiently fry them over medium heat. No need to hurry — give the onions their time; all the flavor comes from frying.

2.) Add the cube-shaped zucchinis to the onions and fry until some cubes are soft and others are golden. Then, add everything to a food processor along with hard-boiled eggs, salt, and pepper.

3.) Grind everything until you get a homogeneous mixture.

Hi Niki,
When do you add the egg? according to the description the eggs are uncooked.
I tried to print a recipe from the site in Hebrew and it came out very faint. I went to the site in English and printed the same recipe in normal dark way. Just wanted to bring it to your attention.
Thanks for the great site.
