One Pot Chicken and Potatoes
I want to share a recipe for chicken that I always make when I’m short on time.
Chicken with potatoes in one pot — the potatoes are really soft and they absorb the taste of the chicken. This is the kind of recipe where I put everything in one pot and let the cooktop do its thing.
Meanwhile, I can start making rice that can blend well with the delicious sauce.
I recommend making a lot because it disappears in no-time.
3 Servings
Ingredients:
1 kilo of halved wings (a little more is possible)
4 potatoes cut into small cubes
Tbsp cornflour
2 tbsp honey/cilantro
Tbsp ketchup
3 tbsp vinegar
3 – 4 cups water
Tbsp tomato paste
Spices:
Tbsp sweet Moroccan paprika
Tbsp chicken grill
Tbsp a. soup
Half a teaspoon black pepper
Half a teaspoon salt
Preparation:
1. Heat a large pot with 4 tablespoons of oil. Arrange the wings in a layer. Mix half a cup of cold water with a tablespoon of cornstarch until dissolved. Add to the pot along with the rest of the ingredients, including the spices but without the potatoes.
2. Bring to a boil, cover, reduce heat to medium, cook for 30 minutes, add the potatoes and continue cooking for another hour.
