Chocolate cheese muffins
I love the combination of chocolate and cheese. I’ll even go so far as to say it’s a winning combination. Want to impress family and friends? Make these muffins, they’re incredibly delicious and they only took me 10 minutes to prep. A perfect indulgent desert.
Makes 14 muffins
Ingredients:
3 eggs
180 grams sugar (3/4 cup)
1 tsp vanilla extract
80 ml oil (1/3 cup)
3 generous Tbsp chocolate drink mix powder
120 ml cream (1/2 cup)
250 grams flour (2 cups minus 3 Tbsp)
1+3/4 tsp baking powder
For the cheese:
2 generous Tbsp 9% soft white cheese
3 Tbsp sugar
1 tsp vanilla extract
1 egg
1 Tbsp corn starch
Preparation:
1. Place the eggs and sugar in the bowl of a mixer and beat on high speed for around one minute.
2. Lower the speed and add the oil, chocolate drink mix powder, and cream. Then add the flour and the baking powder and mix until well combined and smooth.
3. Mix the cheese ingredients with a spoon.
4. Preheat an oven to 180°C.
5. Fill the muffin cups halfway with the chocolate batter. Take a teaspoon full of the cheese mixture and place it in the center of the muffin cup. Use a knife to swirl it around the batter, then top it up with more of the chocolate batter, until the muffin cups are almost (but not completely) full.
6. Bake for around 20-25 minutes or until a toothpick inserted in the middle comes out clean. The muffins will puff up while baking and then lose some of their volume while cooling.
7. Refrigerate for one hour.
