Matzo Brei Pancake Style
I really love making matzah brei. I learned how to make matzah brei from my mother.
I made the basic one — a classic recipe for passover. I made it sweet, without any cheese or anything extra — just matzahs. There’s something about the mixture of matzahs and eggs — it has a magic of its own: make a lot and fry until it turns golden. It took me about 10 minutes to make.
Perfect for breakfast/dinner during passover — it’s wonderful.

Ingredients:
4 matzah
Egg
30 g sugar (3 tablespoons)
1 teaspoon vanilla extract
1/3 teaspoon cinnamon
Preparation:
1. Break the matzos into small cubes, place in a bowl and cover with water for 5 minutes, squeeze out the liquid well and transfer to a bowl.
2. Add the sugar, vanilla extract and cinnamon and mix until smooth, heat a pan with 4-5 tablespoons of oil, form small balls slightly flattened and fry until golden brown on both sides.
3. Eat hot with maple syrup or as is.
