Baked Cheese Pancakes

When you hear the word: “Pancake”, you immediently think of something sweet, right? But this time it’s not sweet, it’s savory, and I chose to bake it rather than fry it.
This recipe is super easy: mix, fill the cups of the muffin pan and put it in the oven, that’s it.
It only takes 5 minutes to make, and the oven does the rest.
I serve it with lots of vegetables along with some cheese, and the kids absolutely love it.

15 Pancakes

Ingredients:

2 eggs
240 ml milk/cream for cooking
30 ml oil (2 tablespoons)
140 g flour (cup)
50 g grated yellow cheese
50 g grated Bulgarian cheese
1 teaspoon baking powder
1 teaspoon salt

Preparation:

1. Preheat oven to 180 degrees.

2. Beat the eggs and milk, while adding the oil and beating for about a minute, add the cheeses and finally the flour and baking powder, beat until the batter is uniform.

3. Grease the molds, put a tablespoon and a half in each mold, put in the oven and bake for about 20 minutes.

I assume when you says “holes” you mean “use a muffin tin”?
