Meatballs with tomato sauce
This is one of the dishes that reminds me most of home, the kind of food my mom used to make with a lot of love. A favorite among young and old alike! A delicious homemade tomato sauce gives these perfect meatballs a great flavor.
Makes 3 servings
Ingredients:
300 grams ground beef
1 grated potato (raw, not cooked)
1 tsp minced garlic
1/4 tsp turmeric
1 tsp paprika
Pinch of cumin
1 level Tbsp chicken bouillon
For the tomato sauce:
4 tomatoes
1 large onion, chopped
3 cloves of garlic
2-3 cups water
1 Tbsp tomato paste
3-4 Tbsp chopped parsley
1 heaped tsp paprika
1 tsp sugar
1 level Tbsp chicken bouillon
Ground black pepper
Salt (if necessary, to taste)
Preparation:
1. Mix all the meatball ingredients in a bowl until combined, roll into balls, and flatten slightly. Refrigerate.
2. To prepare the sauce: Bring a pot of water to the boil. Score the tops of the tomatoes and drop them in the boiling water. Cook for 5 minutes. Rinse, cool, and peel.
3. Chop the onion. Put a pan on medium heat. Add 3 Tbsp of oil to a pan and add the onion. Sauté until softened, add the garlic and sauté for a few more minutes.
4. Chop the tomatoes and add to the pan along with the other ingredients. Cook for 10 minutes on low-medium heat, uncovered.
*5. Two options:
Add the meatballs to the sauce and cook for 20-25 minutes on low-medium heat.
Another option is to fry the meatballs for a couple of minutes on each side and then add to the sauce and cook for 10 minutes.
Good to know…
You can make this dish a day or two in advance, and you can freeze the meatballs. Cooking the tomatoes first is recommended, not mandatory. You can make the sauce a day in advance. You can replace the potato with carrot. Even though there’s sugar in the sauce, it doesn’t taste sweet. I don’t recommend leaving the sugar out, it helps to balance the acidity of the tomatoes.
