Avocado Egg Salad Recipe

The avocado is currently at its peak — this wonderful fruit is everywhere right now. You just have to make something with it. It’s so delicious and no one can resist it.
No matter how much I eat from this salad, it’s just never enough 🙂
I’m even willing to eat it both in the morning and in the evening — I just never get enough of it.
Avocado is one of the best fruits to eat in a salad.
Everyone loves this salad. I don’t know a single adult or child that can resist it.

2 – 3 Servings

Ingredients:

2 large, ripe avocados
2 hard-boiled eggs
Small red onion, diced
Half a large lemon, squeezed
Half a teaspoon of salt

Preparation:

1.) Peel of the skin of the avocado, take the pit out and cut the avocado into quarters. Using a fork, squash the avocado and the eggs into a mash. Add the onion, lemon juice, salt and pepper.

A delicious sandwich idea:
2 slices of wholemeal bread (whole grains)
Avocado spread
Sliced tomatoes
Sliced cucumbers
Onion rings
Salt
