Best eggplant salad
I have already told you how much I loved eggplants and fortunately my husband loves them even more. This salad is the piece de resistance on our table every Friday night. Best eggplant salad
1 big onion cut into small cubes
2 eggplants cut into cubes (with the peels)
200 gr. tomato puree
1/2 cup water
1 tsp. sugar
1 tsp. Paprika
Diced black pepper
1. Fry the onion until it becomes transparent, add the eggplant cubes and cook until it becomes soft.
2. Add tomato puree, water and spices and cook until everything blends and check the taste.
Bring a slice of bread, put a good portion of eggplant on it and think that life is beautiful.
