Eggplant and Olive Salad
I just love eggplants. Thanks to my husband who made me fell in love with this lovely vegetable. This salad is made with eggplants and olive. A great combo! Every bite feels like heaven.
Ingredients:
1 medium-sized onion
1 big eggplant
2 big tomatoes
1 can of pitted olives
1 cup and 1/2 water
1 tsp. sugar or according to taste
2 spoons Moroccan Paprika
1 spoon tomato puree
1 spoon soup powder
Diced black pepper
Salt
Preparation:
1. Boil water, put in olives and cook for 10 minutes; then throw out the water and repeat the operation at least 3 times.
2. Fry the onion until it becomes yellow, cut the eggplant into small cubes and add to the onion, fry together for several minutes until it becomes soft, add the chopped tomatoes, the rest of the ingredients and cook for 30 minutes mixing from time to time until it gets soft and tasty.
