Quick and Easy Lentil Soup

The best part is that it’s ready in 20 minutes. It takes me only two minutes to put everything in the pot. It’s hard to believe that a soup this easy is so delicious.
It’s a classic for lentil lovers. But then again, who doesn’t love lentils? There’s nothing like a good lentil soup.
There isn’t even a drop of oil in this soup, which is a great bonus. No need to fry anything. Just put everything in the pot for 20 minutes and that’s it. You can see why this is the most popular soup on the site.

Ingredients:
3/4 cup red or orange lentils
2 small potatoes
2 carrots
7 cups boiling water
3 tablespoons chopped parsley
1/2 teaspoon paprika
1/2 teaspoon turmeric
2 tablespoons bouillon powder
Ground black pepper
Salt (if needed)
Preparation:
1. Bring the water to a boil in a pot.

2. Peel the potatoes and carrots, then grate them using the large holes of a grater.

3. Add the lentils, grated vegetables, and seasonings to the boiling water. Let it boil for 5 minutes.

4. Slightly reduce the heat, partially cover the pot, and simmer for 10 minutes.

5. Stir in the parsley and simmer for another 10 minutes. Taste and adjust the seasoning if needed.

⏰ Can I make this soup ahead of time? Yes, it’s perfect for meal prep. You can make it 1–2 days in advance and keep it in the fridge. Just a tip: red lentils absorb liquid as they sit, so the soup will thicken. When you’re ready to eat, simply add a splash of boiling water while reheating.
🥕 Do I really need to grate the vegetables? Yes, that’s the secret! Grating the carrots and potatoes is what allows them to cook so fast (in just 20 minutes) and gives the soup its great texture without needing a blender.
🥣 Can I use a different type of lentil? For this 20-minute version, red or orange lentils are a must. Green or brown lentils take much longer to cook and won’t give you the same creamy, “melt-in-your-mouth” result.
👶 Is it kid-friendly? Definitely! Because the vegetables are grated and the lentils melt away, the texture is very smooth and consistent. Kids usually love the mild flavor and the bright orange color. It’s a great way to sneak in some veggies!
🍋 Can I add lemon juice? Yes! A little squeeze of fresh lemon right before serving really “wakes up” the flavors of the lentils. It adds a lovely freshness that goes great with the turmeric and cumin.
