Sweet Cheese Rolls

Yeast cakes are my absolute favorite and they pair so well with cheese for a light and fluffy baked good.
This is one of the best cakes you’ll ever make.
The dough is easy to work with as long as you give it enough time to rise. The problem with the filling is that it’s impossible not to eat with a spoon while preparing. Just imagine how good these smell while baking in the oven, and the taste when they’re fresh is divine! You’ll get so many compliments.
Just watch how to prepare because it’s slightly different than usual.

Makes 11 cheese rolls
26 cm baking pan + 30 cm English cake pan

Ingredients:

1/2 kilo flour (3.5 cups + 1 Tbsp)
11 grams dry yeast (1 Tbsp) or
25 grams fresh yeast
40 grams sugar (2 Tbsp)
1 tsp salt
40 grams instant vanilla pudding powder mix (2 Tbsp)
240 ml warm milk (1 cup)
2 egg yolks
125 grams softened butter

For the syrup:
120 ml water
40 grams sugar (2 Tbsp)

For the cheese filling:
500 grams 5% soft white cheese
plus 3 generous Tbsp soft white cheese
1 egg yolk
100 grams sugar (1/2 cup)
1 Tbsp instant vanilla pudding powder mix

Preparation:

To prepare the filling:
1. Start with this stage. Strain the cheese from its liquids for around three hours by placing a kitchen towel inside a strainer and pour the cheese in and let the liquid drain out.

2. Mix the flour, sugar, vanilla, and salt and add the yeast and mix gently. Add the egg yolks, milk and butter and knead until you get a smooth and soft dough. Let rise until the dough doubles in volume, around two hours.

3. Roll the dough out into a 40×30 cm rectangle and spread the filling over the dough. Cut into thick strips and roll each strip into a pinwheel. Arrange the rolls side by side in a baking tray but not too close to each other.

4. Let rise for 15 minutes. Preheat an oven to 180°C. Beat an egg with honey and gently brush over the rolls and bake for around 25 minutes.

5. Heat the water and sugar in a pan for 2-3 minutes until dissolved and brush over the rolls when they come out of the oven.
