Stir fried chicken breast

This is the kind of quick recipe I like to make. The chicken breast comes out tender and my kids really love it, especially the little ones. It’s a classic flavorful recipe for them.
It only takes a few minutes to prepare. Pair it with white rice and you have a perfect lunch or dinner. This will definitely become a regular on your weekly rotation.

Ingredients:

1 kg chicken breast cut into small chunks

For the marinade:
4 Tbsp olive oil
1 Tbsp paprika
1 tsp soy sauce
3/4 tsp baking soda

Flour

For the sauce:
1 Tbsp paprika
1/2 tsp rotisserie chicken spice
1 Tbsp chicken bouillon
1/4 cup olive oil
Ground black pepper
Salt

Preparation:

1. Place all the marinade ingredients in a bowl and add the chicken breast. Mix well and set aside for two hours.

2. Mix all the marinade ingredients together and add the chicken. Let marinate for around an hour.

3. Finely dice the vegetables and add to the marinating chicken. Mix well.

*4. Transfer to a microwave safe dish, cover, and cook on high heat for 10 minutes. Check that the vegetables and chicken are cooked through, and serve.

Good to know…
You can substitute the chicken breast with boneless skinless chicken thighs. It’s important to finely dice the veggies so they cook more quickly, and to check that the veggies are cooked through when the dish comes out of the microwave. You can always put it back in for another minute if it needs more time.  A quick recipe for busy people.

The English recipe won’t really work..
Needs to be revised – it’s just 4 different steps of marinade 😉
