Veggie fritters
Want to make something easy and healthy without having to work hard? I had an assortment of
vegetables in the fridge, so I knew I would make fritters using them. I love making vegetable fritters,
especially since they’re so easy and add so much to any meal.
These will disappear very quickly — there wouldn’t be any leftovers left. This is a simple and tasty recipe that even the kids love.
15 Fritters
Ingredients:
1 small onion
1 large zucchini
2 carrots
1 potato
1 small sweet potato
1 clove of garlic
1 egg
3 Tbsp cilantro
2 Tbsp oil
1/2 cup flour
Ground black pepper
1 tsp salt
Preparation:
1. Grate all the vegetables, chop the cilantro and add to the veggies along with the other ingredients, and mix.
2. Form patties, flattening to gently squeeze out any excess moisture.
3. Heat 2-3 Tbsp of oil in a pan and fry the fritters until golden on both sides. Remove from the pan and let drain on a plate lined with paper towels.
*4. If you want to bake, not fry: Preheat an oven to 180°C. Line a tray with greased parchment paper and place fritters on the paper. Bake for around 25 minutes or until golden. Don’t try and flip the fritters before the time is up. Flip and bake on the other side for 15 minutes or until golden.
Served with: cream of tomato soup, Pizza recipe, sabich salad, and strawberry mousse for dessert.
