Chicken Schnitzel for Friday's lunch

Friday lunch is a light meal before the big and heavy Friday dinner. I made Roy’s favorite meal, he asks for it every time. It’s the kind of meal that everyone finds something that they like in it because there are so many options to choose from, in a single meal!
The schnitzel that my kids love the most with eggplants. I also made some cauliflower along with some tahini. I used big braided rolls so that everything can fit there. I don’t think that there’s any room left for Friday dinner.

Ingredients:

Schnitzel that children love the most (there is no better schnitzel)
Fried eggplant
Spicy eggplant stew / salad
Fried Cauliflower Salad
Restaurant tahini
Vegetable salad
Large braided buns

Preparation:

1. How do you make this meal without stressing on Friday?
I made a spicy eggplant salad / matbucha a day in advance, it was tastier and the flavors were stronger. You might think that schintzel is hard to make. Well, it’s not true. I had everything ready in the freezer, all I had to do was just defrost and fry it.

2. Fried Cauliflower Salad can be made a day in advance too, but it’s most likely that it’ll get eaten without you even noticing because of how tasty it is.

3. Fried eggplant on a Friday is a must, I recommend making a little more than usual because they get eaten really fast. Meanwhile I start frying the schnitzels. If you look closely, you can see that I used
fillet. It’s reallt soft, suitable for children and for sandwiches.

4. I also quickly made some tahini sauce and I started to work on the sandwiches. I cut the roll in half. For Roy I put a layer of a spicy eggplant salad and for Aviv I gave the tahini sauce along with some harissa sauce. Above that, I added a layer of 3 – 4 schnitzel fillet in each roll.

5. To finish, I also added cauliflower with parsley and a touch of tahini sauce.

6. Let the rolls absorb the liquids and give it a bite, a delicious sandwich for Friday.
