Dairy-Free Chocolate Cookies
Such a treat for chocolate lovers. These easy and addictive cookies are super chocolatey and quick to bake. Chocolate lovers are really going to love these.
Makes 50 cookies
200 grams dark chocolate
80 ml oil (1/3 cup)
200 grams sugar (1 cup)
210 grams flour (1.5 cups)
3/4 cup white chocolate chips (not mandatory)
1. Preheat an oven to 180°C.
2. Melt the chocolate and oil in the microwave. Mix until smooth and well combined. Place the eggs and sugar in the bowl of a mixer and beat together on high speed for around a minute. Lower the speed and slowly add the melted chocolate, then the flour followed by the chocolate chips.
3. Two preparation options:
Moisten hands and form balls. Arrange on a baking tray with small spaces in between each ball. Bake for 8 minutes. The cookies firm up but are still moist and cracked on top.
Another option but you have to work quickly:
Fill a piping bag and pipe into small mounds. The batter isn’t the easiest to pipe so work quickly before it hardens.
4. Bake for 8-9 minutes. It’s really important to remove from the oven when the cookies are firm but still moist and cracked on top.
Good to know…
You don’t have to add chocolate chips but if you do, form the cookies by hand rather than using a piping bag. Note that the cookies do not flatten but retain their round shape if you form them by hand.
