Quick Mango Mousse

I want to share with you a lovely dessert. I eagerly wait for the arrival of mangoes every year to make the mousse. I deliberately went for a simple dessert without baking, without special ingredients, without gelatin, and the main thing is the mango.
The result is a creamy, soft and tasty mango-flavored mousse and it’s even suitable for those who don’t even like mangoes. Especially on hot days, when you’re looking for something cold and refreshing to eat, this is a great dessert. Make it and you will not regret it.

10 Small cups

Ingredients:

250 g mango puree (cup)
(2 medium mangoes, peeled)
500 ml sweet cream (2 boxes)
40 g instant vanilla (2 tablespoons)
2 – 3 tablespoons sugar depending on the sweetness of the mango

I keep shortcrust pastry crumbs in the freezer / biscuit crumbs

Additional:
Mango layer:
Medium ripe and soft mango (preferably Maya)
2 tablespoons sugar
80 ml water (a third of a cup)
4 additional tablespoons water
A tablespoon cornstarch

Preparation:

1. Put a teaspoon of shortcrust pastry / biscuit crumbs in the bottom of each glass, whip instant cream and sugar until soft peaks, add the mango puree, mix gently until everything comes together.

2. Fill the glasses to 3/4 height.

3. Mango layer:
Peel the mango, remove as much flesh as possible, leave only the seed, transfer to a food processor and grind to a uniform puree.

4. Put a third of a cup of water in a pan, boil the sugar and mix until the sugar dissolves, mix cornstarch and the rest of the water until the cornstarch dissolves, add to the pan, mix until it starts to thicken and remove from heat. Add the mango puree, mix until everything is uniform, cool for a few minutes.

5. Put a nice spoonful of mango on each mousse and cool for about an hour.
